(This Spicy Bean Dip recipe comes from the site Damn Delicious, so check it out here!)
Step by Step Instructions:
You’ll love how fast and simple this Spicy Bean Dip is, so here’s what you’ll need: 1 can of Cannellini Beans, Chipotle Peppers in Adobo Sauce, 1 Lemon, 2 cloves of Garlic, Ground Cumin, Chili Powder, and Extra-Virgin Olive Oil (not pictured).
Begin by opening the beans and rinsing and draining them really well, so you can remove the salty water it’s packed in.
Then while the beans drain, remove the skins and trim 2 garlic cloves.
It’s already time to put the dip together, so add the the drained beans, 1-3 chipotle peppers (I did 3 which made it nice and spicy), the garlic, 1 teaspoon each of cumin and chili powder, and 2 tablespoons of lemon juice.
Give the ingredients a nice pulse so they start to combine.
Then as the mixer processes (with the lid on), stream in 1/4 cup plus 2 tablespoons of EVOO (or a total of 6 tablespoons) slowly until the mixture is combined.
Then taste, adjust the seasoning for the Spicy Bean Dip, and combine. So you’ll see I added 1 teaspoon of salt and more lemon juice (at least a teaspoon) to brighten the flavors. Pulse the mixture again and then taste until you’re happy with the flavors. Then serve the Spicy Bean Dip with your favorite tortillas, corn chips, crackers, or veggies and enjoy!

Process for a few seconds, and then while the processor is running stream in the olive oil. Combine until the mixture is thick and creamy.
