Well it’s the day after Christmas, and I’m officially exhausted. I’m guessing many of you are like me, and got up early to open presents and then began the huge endeavor to tackle Christmas dinner. So after all of that work, I had one thing on my mind for dinner Christmas night…dip! Broccoli Parmesan Cheese Dip, that is.
This year’s Christmas lunch was a feast to be sure. My eyes were bigger than my stomach, and I found myself trying to strike a deal with each forkful to “be kind” to me as I worked through the mound of food…mostly mashed potatoes if you’ve seen my Instagram pictures. So when it came to even contemplating dinner later in the day all I could think of was something light to snack on…and pie, of course.
I’d had my eye on this Broccoli Parmesan Cheese Dip I spotted on Pinterest from the Damn Delicious blog several weeks ago. And it seemed like the perfect thing to whip up and munch on. And it was easy…ooh plus it had broccoli so it was healthy by default.
Like any good dip, cream cheese and sour cream were involved along with some Parmesan cheese and cheddar cheese. Add to that some milk, broccoli florets (raw) and seasonings including onion powder, garlic powder, salt and pepper, and creole seasoning and voila, you’ve got yourself a kick ass snack. I did make a small adjustment to the topping…the recipe calls for you to toast the breadcrumbs with some olive oil, but I decided to make it a little lighter by topping with Panko and then spraying with cooking spray…worked great!
All you do is combine all of those ingredients, pour it into a baking dish that’s been sprayed with cooking spray, top with a little more cheddar cheese and some Panko bread crumbs and bake. In 20-25 minutes, you’ll have this bubbling, delicious creation that at first glance might look like a casserole. But fear not, it was an awesome dip! I served mine with some tortilla chips, but some carrots or celery or your favorite hearty crackers would be fabulous too. Keep in mind what you’ll be serving your dip with and adjust the seasonings too. Since I used tortilla chips, going a bit lighter on the salt in the dip would be pretty darned smart…(she notes in hindsight).
My breakdown of the dip goes as follows…the broccoli provided some texture and made you feel a little less guilty as you devoured the dip. But truly the creole seasoning was the hero here. It gave just enough heat and complexity of flavors to really keep the dip from being over the top rich. (I mean let’s be real here, there was a TON of dairy happening in this dip, so it really needed a kick to cut the richness.)
