While I was really feeling the urge to make something all Fall-like and pumpkin-y, I decided I better mix it up a bit. It’s been a long time since I’ve cooked pork chops, so when I came across this Drunken Pork Chops recipe on the site Siggy Spice via Pinterest, I was very intrigued.
I was even more encouraged when I looked at the ingredient list and realized I had everything on hand except pork chops and ketchup for this recipe. Ketchup just weirds me out on a lot of levels, so I didn’t even have any on hand. (Just the fact that I saw ketchup on the ingredient list and didn’t run for the hills makes me really think I’m growing as a person.) Go Me! 😉
Want to know the best part? This was a cinch to make. I made it over my lunch break, in fact. All it takes is to use a large sauce pan, and brown the pork chops on both sides. While the chops are cooking, mix up a bottle of dark ale (don’t go Guinness-dark so just pick your favorite beer), brown sugar and ketchup. Once the pork is browned, pour the sauce over them and simmer for 40-45 minutes. Then thicken the sauce after that and serve it with rice or mashed potatoes.
Ordinarily I’m a bit mashed potato obsessed but for the sake of time and a growling stomach, I went with rice. And despite the ketchup’s appearance, this was such a good dish that I could have licked my plate clean, and nearly did. I cannot wait for you to try this one out for yourself!
