This is hard to believe, but it’s true…I’ve never eaten a calzone before. So this week was a serious week of firsts because not only did I eat a calzone for the first time, but I also made calzones for the first time. Hooray for firsts!
So something made me search for some top food blogs online the other day and I came across the site Two Peas and Their Pod and this calzone recipe caught my eye. That’s when I realized that I’ve never actually eaten a calzone before, so it seemed like a sign to remedy this discovery.
I also discovered that you can purchase refrigerated pizza dough. You are probably super cool and already knew this, but as much time as I spend in the grocery store every week shopping for my lovely blog, I had never stumbled upon this little gem before. But I digress, yay for not having to make my own pizza dough.
Here’s the thing…this week was busy. Like really busy. So it worked out that I got 4 calzones out of this recipe and that meant 3 meals of leftovers. And they heated up well. Plus the calzones surprisingly came together pretty carefully, which as you probably are well aware is an oh-so very good thing in my book.
These calzones were delicious. They had a fabulously cheesy filling made of Parmesan, Mozzarella, and Ricotta. Then the addition of some onions, garlic, chopped kale (yes, another recipe with kale!), mushrooms (I went with baby Portabellas) made for a filling calzone. But now my meat-eating wheels are turning and I’m pretty excited to try these again with some sausage or something equally meaty…I am already salivating.
So my friends, if you’re in the mood for some homemade pizza then give these calzones a try. I was pretty darned proud of my first calzone attempt, and I am certainly looking forward to attempt #2.
