I was looking back at the recipes I made last year, and there were so mighty good ones. I did notice a few things though…not enough quinoa and goat cheese that’s for sure! So I aimed to increase the quinoa quota this week (say that 5 times fast!). I came across this recipe on the site Shopgirl (which really just makes me want to watch “You’ve Got Mail” if we’re being honest) for Cheesy Quinoa and Broccoli Patties, and well it was kinda perfect.
I saw the recipe and realized that I hadn’t done anything with quinoa in a while, which is a shame because it’s so damn good for you! I also thought that the last quinoa patties I made were delightful, and it was about time I attempted them again. Plus I had a head of broccoli in my fridge that had been staring at me, practically begging for this dish.
And I really love when I have most everything on hand. I just needed an onion, some breadcrumbs, and some cheese…cuz a girl can NEVER have enough cheese. I opted for a sharp cheddar, in case you’re curious…the sharper the better I say!
One tip for you that I plan on doing next time is cooking the quinoa, broccoli and onions quite a bit in advance. They need to cool so that they don’t scramble the eggs when combining everything. So if I cooked them and refrigerated them in advance, it’d be a really easy dish to throw together.
These were really easy and I used 1 pan to cook the onions, broccoli and patties. And with all of the cooking and cooling steps, it really allowed me to clean up as I went, which I appreciate. I mean who wants to finish cooking and be surrounded by piles of dirty dishes…I didn’t think so either. And by cooking these patties over a medium heat for 7 minutes on each side they develop this fabulous crust that is crispy and flavorful.
And my goodness, when you serve these right after cooking they are just pure ooey gooey goodness. And honestly this is a great way to sneak healthy quinoa and broccoli into kids’ diets too. I bet you they will gobble them up!
