Thai-Style Brussels Sprouts

Step by Step Instructions:

To mix up this incredible dish, the following ingredients are needed: 1 pound of Brussels Sprouts, Extra-Virgin Olive Oil, Sriracha Chili Sauce, Fish Sauce, 1/4 cup chopped Cilantro, 1/2 cup chopped Peanuts, Fresh Lime Juice.


Begin by rinsing the Brussels sprouts, then trim the stems and remove the rough outer leaves. Next, cut each sprout in half lengthwise and then cut in strips to shred them.


You could always run these through the food processor, but I liked cutting them with a knife so that I could ensure they would be pretty and uniform and stay together a bit better to make eating easier.


I then heated 2 tablespoons of olive oil over medium-high heat.


The shredded Brussels sprouts get added to the hot oil and are sautéed for about 4-5 minutes or until they are lightly browned and tender.


I removed the pan from the heat and added about 3 teaspoons of fish sauce.


Then I stirred in the fresh cilantro I had chopped earlier.


I plated the Brussels sprouts and then squeezed some lime juice over them. The dish is then topped with a nice handful of chopped, unsalted peanuts and a few drops of Sriracha chili sauce. Add as much or as little as you like for heat, and then devour–I mean eat up! I can’t wait to make this again!

Thai-Style Brussels Sprouts
(Makes about 4 servings)

Ingredients:
2 tablespoons olive oil
1 pound of brussels sprouts, shredded
2-3 teaspoons fish sauce, add more to taste
1/4 cup chopped cilantro
1/2 cup chopped peanuts
Lime wedges
Sriracha chili sauce, to taste

Preparation Instructions:
1. In a large skillet heat the olive oil on medium-high heat.

2. Add the shredded brussels sprouts.  Sauté until they begin to soften and brown just a bit, about 4-5 minutes, stirring frequently.

3. Remove from heat.  Stir in the fish sauce.  Mix in the cilantro.  Squeeze some lime juice over everything.  Adjust seasonings if necessary.

4. Top with chopped peanuts and a few drops of the Sriracha chili sauce. Enjoy!  And remember to share.
