Skinny Pasta with a Side of Pain, Please

Okay, the side of pain was not planned, but sometimes you have to roll with it.  I pinned a recipe for pasta with zucchini and a lemon-yogurt sauce that was by Jillian Michaels, and I quickly added this to my “recipes to make” list!

I had been craving a yummy, light pasta dish lately, so I knew I had to make this dish this week. I ran into a slight problem when I cut the side of my thumb pretty badly while slicing the zucchini. Note to self, never hesitate about using the guard for the mandolin…it has an extremely sharp blade and will cut you badly.

So after nearly passing out and dealing with my issues with copious amounts of blood, I was determined to finish dinner. The show must go on! So I took a deep breath and continued on. Luckily this dish was fairly easy to make even when I was down one thumb.

You just need to make the sauce which includes yogurt, lemon zest, Parmesan cheese, salt and pepper. The pasta gets cooked while the zucchini is sauteed in a pan and then the tomatoes get softened a bit. Everything is mixed together and voila…time to eat! Love that!!

This dish was totally a hit for me. It left a good amount of leftovers along with a very satisfied stomach! The main things you’ll need is a good knife or mandolin to cut the zucchini in even slices (just please use the guard if you go for the mandolin) and a grater/microplane for the lemon zest. Then you’re all set!!

What I was cooking up a year ago: Ah, Nutella…

This time last year I baked some delicious cookies with Nutella and peanut butter and then they were sandwiched together with a peanut butter filling. These were seriously delicious…crunchy from the peanuts in the peanut butter but rich from the Nutella and creamy peanut butter. This is certainly a cookie that you need to try. Happy baking!
