Pasta + A Fried Egg = Lemon Parmesan Angel Hair Deliciousness

Yeah Pasta with a fried egg does sound weird…you’re totally right. In fact, it sounded so weird I just had to try it. The verdict is that Lemon Parmesan Angel Hair topped with a fried egg is delicious! Thanks to Pinterest where I found this great recipe on the site “In Sock Monkey Slippers” with a super fun name that I’m looking forward to checking out for the future.

Here is why this dish works. The sauce the pasta is tossed in is very light with lemon juice and zest, Parmesan cheese, some tomatoes, thyme, and salt and pepper. The yolk of the egg mellows out the lemon just a tad and adds for a hint of richness but not too much.

If you’re only cooking for 1 or 2 people and need a quick dish to throw together that is light and flavorful, then you’ll definitely need this recipe. It made enough for two servings, came together very quickly. In fact, I whipped up the sauce while the pasta cooked. And the egg fries up in 3 minutes, so you’re all set. If you need more than 2 servings, no worries. This would be an easy recipe to double.

A couple of cooking tools you’ll appreciate with this dish: Let’s start with a microplane grater. I use mine a ton as you’ve probably noticed. It’s perfect for zesting lemons, limes, and grapefruits and doesn’t take up much space in a drawer. A juicer of some kind. My hand-held juicer for lemons and limes has come in super handy over the years. Otherwise you should be all set.

I found that the pasta had fabulous flavor thanks to the lemon juice and lemon zest along with the fresh thyme leaves. The cherry tomatoes add a nice burst of freshness, and the fried egg yoke is silky and cuts a bit of the lemony kick without being overpowering.

Trust me, friends, I was skeptical about this one, but I’m sold. Click here for this fast and easy recipe and step by step pictures.

  • I'm pretty sure that this guy meditated with me during our day 5 meditation by @actionjacquelyn and @stretchyfitapp for the #fitbodystrongmind challenge. Relaxing is tough you guys! I'm trying to get better at being present and surrendering to the moment. Grateful for the 5 days to recenter and be present. How are you doing in that part of your life? ♥️🐾♥️ #stretchybabe
  • Today I started the #fitbodystrongmind 5 day challenge with a fantastic Barre workout from @actionjacquelyn - During the workout I realized how easy it could be to do fewer reps but I continued to push myself today and I'm so glad I did. My self love exercise today was stretching. I've been mindful to fit in at least one stretching session a day and I'm AMAZED how little (& one BIG) areas of my life have improved. I feel crazy even tying those things to stretching but I believe! @stretchyfitapp #stretchybabe
  • Friends, we need to talk about how AMAZING these Double Chocolate Avocado Blender Muffins are. Not to mention I made a #lowsugar #lowcarb super healthy version of this sweet treat by @lauraleabalanced. If you love chocolate, then you'll love them! #llbook2challenge
  • To rent or buy...what do you prefer? Full disclosure...I hate moving. But it's been on my mind a lot lately. I'm running out of space in my little apartment especially since getting my puppy. So I'm toying with moving to a bigger apartment while saving up for a house. Is home ownership all it's cracked up to be or do you like renting? Team rent or team home ownership? Comment below and let me know. I'm feeling pretty torn if I should keep renting or save up and put down roots. ✨✨✨✨✨✨✨✨✨✨✨

  • Favorite flavor combo? Comment below!! For me it's totally peanut butter and chocolate. And I'm extremely torn between the OG Reese's pb eggs and the new ones with the pieces in them. Really thought I'd hate the latter and they're amazing! Thoughts? Have you tried them both?
