Pasta + A Fried Egg = Lemon Parmesan Angel Hair Deliciousness

Yeah Pasta with a fried egg does sound weird…you’re totally right. In fact, it sounded so weird I just had to try it. The verdict is that Lemon Parmesan Angel Hair topped with a fried egg is delicious! Thanks to Pinterest where I found this great recipe on the site “In Sock Monkey Slippers” with a super fun name that I’m looking forward to checking out for the future.

Here is why this dish works. The sauce the pasta is tossed in is very light with lemon juice and zest, Parmesan cheese, some tomatoes, thyme, and salt and pepper. The yolk of the egg mellows out the lemon just a tad and adds for a hint of richness but not too much.

If you’re only cooking for 1 or 2 people and need a quick dish to throw together that is light and flavorful, then you’ll definitely need this recipe. It made enough for two servings, came together very quickly. In fact, I whipped up the sauce while the pasta cooked. And the egg fries up in 3 minutes, so you’re all set. If you need more than 2 servings, no worries. This would be an easy recipe to double.

A couple of cooking tools you’ll appreciate with this dish: Let’s start with a microplane grater. I use mine a ton as you’ve probably noticed. It’s perfect for zesting lemons, limes, and grapefruits and doesn’t take up much space in a drawer. A juicer of some kind. My hand-held juicer for lemons and limes has come in super handy over the years. Otherwise you should be all set.

I found that the pasta had fabulous flavor thanks to the lemon juice and lemon zest along with the fresh thyme leaves. The cherry tomatoes add a nice burst of freshness, and the fried egg yoke is silky and cuts a bit of the lemony kick without being overpowering.
