Mashed Cauliflower

Step by Step Instructions:

To make this super easy and tasty dish, these ingredients are needed: 1 Head of Cauliflower, Salt and Pepper, Heavy Cream, Goat Cheese, and Butter. Don’t freak out too much by the cream and butter, because you really don’t need much for the entire dish.


Begin by breaking down one head of cauliflower into fairly small pieces. Then place the cauliflower in a microwave-safe dish. I lightly covered the dish with plastic wrap so that it wouldn’t tightly seal. Then the cauliflower gets cooked in the microwave for about 8 minutes or until tender.


As seen above, the steamed cauliflower will get a little darker and the stems will be slightly opaque. Be sure to test the cauliflower’s tenderness to make sure a sharp knife is easily inserted.


This dish can either be combined in an electric mixer as I did or in a food processor. I opted for the electric mixer because that is how I normally mash potatoes, so I was curious how it would work with the cauliflower. If you used the food processor it will be a little creamier. Spoon the cauliflower into the mixer bowl (careful to not get too much moisture from the dish that was created when steaming the veggies). To the cauliflower add 2 ounces of softened goat cheese and 2 tablespoons of heavy cream. Add salt and pepper to taste.


Then mix the ingredients at a fairly high speed to mash the cauliflower and make the dish fluffy like mashed potatoes. Then that’s really it. Add any additional salt and pepper if needed. Serve the mashed cauliflower and top with 1 tablespoon of butter (for entire recipe, not serving) and enjoy! Seriously the goat cheese really makes this dish. Bon Appetit!

Ingredients:
1 head Cauliflower
¼ cups Goat Cheese
2 Tablespoons Cream
2 dashes Salt And Pepper
1 Tablespoon Butter

Preparation Instructions:
1. Chop cauliflower up, including stems, and put into a microwave safe dish.

2. Heat for 8 minutes or until cauliflower is soft.

3. Place cauliflower, goat cheese, cream and salt and pepper in a food processor and beat until creamy.

4. Garnish with butter and additional salt and pepper and enjoy!
