Making Pizza Healthier with Eggplant Pizza

Now don’t go thinking that because I made Eggplant Pizza that I have something against pizza. I’ve rarely met a pizza I didn’t like, which is why when I saw this Eggplant Pizza recipe on Pinterest I was rather intrigued. And this recipe originates from Julia Child, who has been a culinary icon in our home growing up forever. Plus yesterday would have been her birthday, which seemed fitting.

If you do much searching on this here blog, you’ve probably noticed there are no eggplant-featuring recipes to be found. It’s not generally a veggie I do much with, which is exactly why I was excited to try this out. After all trying new ingredients & recipes is why I created my blog.

So the idea with these is to make mini pizzas and use the eggplant slices instead of pizza dough. While I adore my carbs, I figured we all need to lighten up now and again. I was also making my own sauce while the eggplant slices roast. Then the slices are topped with sauce, basil (hell yes!), and a mix of parmesan and mozzarella cheeses. And can we just take a moment to appreciate how amazing basil smells…sigh.  Okay, moving on…

When all was said and done, this recipe was delightful! Great flavors and textures and just overall yum. This was also really easy and doesn’t require too much in the way of kitchen tools. As always I love my Silpat and it comes in very handy. I had most of the ingredients on hand which rocks.
