Learning to Love Salads – Part 6: Chopped Salad

Who doesn’t love a great chopped salad? As I’m on my journey to enjoy eating salads, I really feel like the chopped salad is right up my alley. I love when I can customize a recipe to my tastes, and obviously a chopped salad is a perfect example of this.

I used the Pioneer Woman‘s recipe as a suggestion and then simplified things to make my own salad. With the weather heating up here in the Midwest, it felt great to go back to eating lighter, healthy food that is very fresh.

This salad was super easy. Just throw your lettuce and favorite salad items in a bowl with your dressing of choice and toss it. Then put the salad on a large cutting board and chop away and serve. It couldn’t be more simple or fast and makes for a perfect light lunch or dinner option.

The only prep work I did ahead of time was to hard boil a few eggs, and chop up some of my veggies. My salad dressing of choice was a yogurt-based blue cheese dressing that is a great light option. I was a big fan of this salad and can’t wait to make it again for dinner tonight.
