I was revisiting a few of the great foodie blogs I’ve come across over the past year recently, and I made my way back to the site Eating for England. I absolutely adored the quinoa salad recipe I found last year on this site, and instantly I found another great salad to assist me with my mission to actually enjoy eating salads.
So this week, I tried out this Wintry Salad with Grapefruit and Goat Cheese. I knew I would be a happy camper when both grapefruit and goat cheese were involved. Based on the number of recipes I make with goat cheese, you probably have a good grasp on how much I love this ingredient. But I haven’t done much with grapefruits on my blog, which is a shame.
I love grapefruits. I have very vivid memories of my childhood where I would split a grapefruit with my mom or sister and sprinkle some sugar over the top of my grapefruit half. Then I would slowly and carefully scoop out the segments and devour. I adored when my eye would twitch from the tartness, which explains why gooseberry pie is one of my all-time favorite desserts. 🙂 Once all of the segments were scooped out and eaten up, I would squeeze my grapefruit half to rid it of all its juice and drink that down. I was a funny kid, I know, but I loved a breakfast that involved grapefruit! But I digress…back to this salad.
As the weather is getting warmer this Spring, I’m warming back up to eating salads, and this dish got me back on track. We all know you eat with your eyes first, and the great colors and look of the dish make me want to dive in! In fact, I’m actually looking forward to eating this salad again. I may just be a salad lover by the end of this year after all.
A few kitchen items you’ll need to make your life easy with this dish: A microplane grater for zesting the grapefruit, a hand held juicer to juice half a lemon, a sharp paring knife and a sharp small chef’s knife both for peeling and cutting the grapefruit.
