Cranking Up the Crock Pot with Black Bean Burritos

Yes! My plan to use my crock pot more in 2014 is going so well. From Honey Sesame Chicken, Salsa Chicken, Beef and Broccoli, Kalua Pork and Warming Slimdown Soup…I’ve been giving my crock pot a work out so far. So it didn’t surprise me at all that when I found a burrito recipe involving the crock pot, I had to make it. Thanks to Pinterest, I stumbled across the Vegan in the Freezer site for this dish. I gotta say these Black Bean Burritos were darned good!

And easy! Just throw tomatoes, salsa, taco seasoning, brown rice, corn, and black beans into your slow cooker and start cooking! You can cook at a higher level if you want to speed up the process. My burrito filling actually cooked faster than I expected and I had it on low heat, so just keep an eye on it. I’d say mine was more than ready in 5 hours time on low heat.

The filling was packed with flavor, and with the brown rice and beans it was pretty hearty as well. You could definitely add some meat to it at this point if you’d like. Then just put about 1/3 to 1/2 cup of filling on your tortilla (depending on your tortilla size) and wrap it up and chow down!

Now let’s talk about toppings. I put some avocados and shredded cheese on the filling before I wrapped up my burrito…this was a great decision! Then I served my burritos with salsa and sour cream. The salsa was so good, so be sure you have some extra salsa to serve with the burritos. It added just a little extra kick, which is great.

I gotta say this made a ton of filling, so if you have lots of hungry mouths to feed, then this is your lucky day! At the moment, I don’t…so I opted to freeze my leftovers. You can freeze the filling or you can make up some burritos and freeze them. I went with the latter. I love when I am having a busy day that I can pop something from the freezer in the microwave and have lunch in no time. And the best part is when it’s something I’ve made, because I know exactly what I’m eating.
