Cranberry Oatmeal Muffins – Making Breakfast Healthier One Muffin at a Time!

All I could think of was baking this week. It’s been a stressful one with work, and then tons of stuff going on throughout the week to keep me busy. Plus I seem to be adding items to my to-do list faster than I can cross them off. So whenever life overwhelms me, I MUST bake. And trying to kick my healthy eating into higher gear, it had to be something that was somewhat healthy…enter: Cranberry Oatmeal Muffins.

I came across this treat on Pinterest (of course) from the site Eat Good 4 Life. One thing that I was sold on for this recipe was it required NO grocery shopping. I love when I have everything on hand! And I also really love that fresh cranberries are still in season, so why not take advantage of that?!

This recipe is fairly healthy as its using ripe bananas as a base and is packed with lots of oats, walnuts, and fresh cranberries. There is some granulated sugar and olive oil to keep the muffins moist and balance out the tartness of the cranberries. The flour component calls for whole wheat pastry flour. I didn’t have that, so it suggested a mix of whole wheat flour and ground flaxseed. I happened to have both of those, so that’s what I went for.

These muffins were super easy to throw together and made 12 muffins exactly. I opted not to use muffin liners and just liberally sprayed the muffin tins, and that worked perfectly. They smelled fabulous as I was pulling them out of the oven too.

I like to think of these muffins as a banana nut muffin with tang! Note that these treats are not overly sweet, which I totally love! I enjoy a bit of a tart kick, which is probably why I happily embrace all things cranberries. You could always add a streusal topping to the muffins for extra sweetness, but I love feeling like I’m not over-indulging.
