(I’m such a fan of these Mango Strawberry Vodka Popsicles, so grab some popsicle molds and let’s do this!)
Step by Step Instructions:
Mango Strawberry Vodka Popsicles are the perfect adult treat, and I can’t wait for you to make them. So here’s what you’ll need: Coconut Water, Frozen Mangos, Frozen Strawberries, 1 Lime, Vodka (I like Tito’s for a gluten free option), and Fresh Berries like strawberries & blueberries to make the popsicles look pretty!
In addition to a blender, you’ll also need popsicle molds and a funnel, and then you’re all set to whip up these Mango Strawberry Vodka Popsicles!
Add about 1/2 cup of coconut water to the blender, so that you have a base for the first puree.
Then add about 1/2 cup of frozen mango and the juice of a quarter of a lime.
Blend away and feel free to add more mango if you need to, because you want the mixture to be thick but still pourable. Then transfer the mango puree to a liquid measuring cup and rinse out the blender.
Now it’s time to repeat this process but with strawberries, so add 1/2 cup of coconut water, about 1/2 cup of strawberries and the juice of a quarter of a lime to the blender.
Then blend until the strawberry puree is thick but still pourable.
It’s time to prep your popsicle molds, so put them in the stand and add 3-4 blueberries and sliced strawberries to each mold.
Now add 1-2 shots of vodka depending on how boozy you want your Mango Strawberry Vodka Popsicles.
Here I’ve added my vodka to the strawberry puree, and stir both purees so the vodka is throughout. I ended up putting 1 shot of vodka in each puree mixture, but in the future I’d probably add more. Also if you don’t want to make it boozy, just skip the vodka part and carry on with the recipe.
I liked the idea of having the marbled look to the Mango Strawberry Vodka Popsicles, so I filled 3 molds half full with mango, and then 3 half full with strawberry using my funnel. Then I used the remaining mango puree to fill up the 3 molds that had strawberry in it, so it was the opposite. Aren’t we looking fancy here??
Finally add the tops to each mold and carefully wipe off any excess puree that overflows. Then freeze the Mango Strawberry Vodka Popsicles for at least 6 hours (I prefer overnight). Once the popsicles are frozen, just run warm water over the molds to release the popsicle and then dive in! Boozy Strawberry Mango Popsicles

I love this sweet treat that is a fusion of a cocktail and a popsicle. It's the perfect adult treat when you want something fruity with a kick!
Ingredients
Popsicle Ingredients:
- 1/2 cup of Frozen Strawberries
- 1/2 cup of Frozen Mango
- 1 cup of Coconut Water, divided
- Juice from Half a Lime, divided
- 2-4 Shots of Vodka (whatever you prefer)
- Fresh fruit to add to the popsicles such as blueberries, strawberries, raspberries, etc.
Instructions

In a blender, combine 1/2 cup of coconut water, the juice of 1/4 of a lime, and 1/2 cup of frozen mango. Add more mango if the mixture is too runny. You’ll want it to be fairly thick but still pourable. Then transfer the mango puree to a liquid measuring cup so it’s easy to pour.

Rinse out the blender and then repeat this process with the strawberries. So combine 1/2 cup of coconut water, the juice of 1/4 of a lime, and about 1/2 cup of frozen strawberries until the mixture is thick but pourable.

Add 1-2 shots of vodka to each puree and stir to combine.

Make sure your popsicles are secure in their holder and add a few pieces of fresh fruit to each one.

For a layered look, fill 3 molds half full with mango puree and the other 3 half full of strawberry puree. Then add the opposite puree to the molds to fill them to the top.

Put the tops of the molds on securely and then wipe with a damp paper towel to clean off any excess fruit that runs over.

Freeze the popsicles for at least 6 hours, but I prefer overnight, so that they are frozen solid. When you’re ready to enjoy, simply run warm water over the outside of the mold until the popsicle releases. Then enjoy!!
