This week I was in search of some great appetizers to make. I had fabulous, jewelry-filled event Wednesday night with our lia sophia team, and I had to make some food that was equally as fabulous and could compete with the gorgeous jewelry and fun. All I can say is: Mission Accomplished!
Recipe #1: Tortilla Rollups
First up, I am always drawn to tortilla rollups whenever I’m strolling through a line of food. I have never made them before, so this week was the perfect time to fine tune my tortilla-rolling skills. I came across a site with the hilarious tag-line of “Never trust a skinny cook…” and I knew I’d like what I found.
What I found was a tortilla rollup recipe that was fast to put together and had a lovely, spicy kick to it to really make these appetizers perfect for seconds or thirds. The spiciness comes from a Mexican-style dip and a can of diced green chiles. This is also a meatless rollup that includes black olives (chopped so small you hardly notice – in case you aren’t an olive-lover), cream cheese, Mexican-style shredded cheese, and then I spread the concoction on some carb balance tortillas. I loved that the website suggests popping the filled tortillas in the freezer for up to an hour prior to make slicing them much easier. It worked like a charm.

Recipe #2: Peanut Butter Cup Blondies
Dish number two was about satisfying everyone’s sweet tooth. I was originally going to make my trusty delightful peanut butter swirl brownies, but I stumbled upon a peanut butter cup blondie recipe on Cooking Light’s website, and knew this was it. I’ve never made a blondie (despite my incredible love for baking), so it seemed appropriate to make blondies for our two blonde and fearless leaders on my lia sophia team that would be leading our meeting.
How can you go wrong with peanut butter cups scattered across the top of blondies that have chocolate chips throughout? The answer clearly is that you cannot. 🙂 These were incredibly rich, so I’m glad I cut the blondies into about 30 bite-sized pieces.
The blondies were easy to throw together and before I knew it, the smell of peanut butter and chocolate was wafting through my home and that is never a bad thing…unless you have peanut allergies, which thank goodness I do not! Needless to say, both appetizers were a total hit! After our meeting I went to the food table to pack up my food and there was one tiny blondie staring at me, and that didn’t last long as I popped it in my mouth. Cleanup was fast since every last rollup was gone, and people were still craving the blondies after they had disappeared. What I was cooking up a year ago: Breakfast for Dinner – Cinnamon Pancakes
Like many people, I love myself some breakfast for dinner, and these Cinnamon Pancakes fit the bill. With little bits of cinnamon sugar throughout the batter, each pancake would have little caramelized spots throughout as the cinnamon butter melted while cooking. So crazy good and I was able to lighten up the dish a bit so I didn’t feel as guilty. If you like pancakes, then these are for you!
