Lately I’ve been cooking up a lot of sides and snacks, which you may have noticed. And I’ve loved everything I’ve been making, but a main dish has been calling my name. Now I still wanted to keep it light and healthy but I could use some starch. I finally settled on this Sticky Honey Lemon Ginger Chicken dish from Carlsbad Cravings and am so glad I did!
At first I was concerned that this recipe might be too similar to one of my favorite dishes I’ve made on my blog…Firecracker Chicken. But unlike Firecracker Chicken, Sticky Honey Lemon Ginger Chicken is not fried, is more sweet than spicy, and was a bit on the lighter side.
Be warned that the prep of the chicken takes some time since you’re breading it, but the fact that it’s baked definitely gives you some peace of mind that you’re eating healthier and it’s worth the effort. Just coat each chicken piece in some beaten egg and then toss in a seasoned flour mixture. This flour is PACKED with flavor that is a mix of ground ginger, onion powder, garlic powder, and paprika. Then the cornstarch helps keep the breading light and airy.
The chicken goes on a wire rack over a baking sheet to help the air flow and bake each piece evenly. Now I had that wire rack packed with chicken pieces, which meant there’d be plenty of food. And while the chicken baked the sauce could get started.
Another recommendation is to mince your garlic and grate your ginger ahead of time. That way you aren’t scrambling like I was. At any rate, just melt some coconut oil in a small sauce pan and saute the garlic and ginger for about 30 seconds. Add honey, lemon juice, lemon zest, Rice Vinegar and cornstarch and let it cook down and then toss your baked chicken with the sauce. I served ours over rice and it was great!
