This week was nearly over when I realized that I still hadn’t cooked or baked at all. I tell ya I have been non-stop busy. I had a fundraiser I was doing on Facebook with my lia sophia company on Monday. Then the next 2 nights were consumed with all things World Series (Go Royals! What an amazing season you gave us!). And then it was jam packed with non-stop work during the day. So what the heck was I gonna make? Well my motto when I’m busy or stressed is, when in doubt…bake! And when M&Ms were brought up in a conversation, I couldn’t stop thinking about Monster Cookies and found this Chewy Peanut Butter Monster Cookies recipe that I couldn’t wait to try.
I found this recipe over at the ever-so-popular Sally’s Baking Addiction blog. I have made some great cookie recipes from this site before, so I knew these would be fabulous. And I love how Sally gives measurements plus weights for each ingredient, so you can weigh them out instead. (That’s my preferred method.) Plus these monster cookies had a fun twist of peanut butter that I hadn’t had in monster cookies before. Oh and I’d never made monster cookies myself. I’m hoping you know what monster cookies are, but if not…they usually have a mix of candies (semi-sweet chocolate chips and M&Ms in this case), and a dough similar to chocolate chip cookies plus quick oats in it.
These cookies were really easy to throw together. Just cream butter with sugar and light brown sugar. Then add peanut butter followed by an egg, and finally vanilla. In goes the flour and baking soda. Don’t over mix it, and then fold in the oats, chocolate chips, and M&Ms. Ta da! Dough is done. Roll the dough into cookie balls, bake them up and you’re all set.
As I’m rolling the dough into balls, I realized that subconsciously I had perfectly timed it because it was Halloween week. So not only were these cookies sooo delicious, kinda adorably colorful, but also meant to be. Plus you can use your leftover Halloween candy to make these as well…go experiment!
Oh and have I mentioned how chewy these cookies are?! I’m not much of a fan of crumbly cookies. Chewy all the way for me. So I am happy to report that these monster cookies have an awesome texture, are chewy, and are rich with a slight crunch from the M&Ms. One review I got said “I’d recommend these to just about anybody.” I interpret that as a) a good thing and b) that the people he wouldn’t recommend them to must be sworn enemies.
