Spicy Basil Chicken – Tell Me More!

June’s blog posts were full of healthy, veggie recipes, and wasn’t that just awesome?! But it was time for something meat-y. I”m always saving recipe posts that I want to try one day, and when I found this Spicy Basil Chicken by Cooking Light, I had to try it. I didn’t really need to read any further than “spicy” and “basil” to know this would be a recipe that I had to make.

Aside from the spiciness and basil, I was pretty excited about the fact that I had everything on hand for this recipe except for chicken and basil. That’s always a huge plus in my book, when I don’t have to go track down a boatload of ingredients. I’m a busy girl, and spending tons of money on groceries is, well, not my favorite thing.

Let’s talk about the chicken for a sec. Here I was using chicken thighs again, and I was a bit more comfy doing so. Next time I might try out chicken breasts with this recicpe just to see which I prefer more. But the chicken thighs weren’t bad to deal with once I got them trimmed up a bit. Another thing I might switch up next time is adding some veggies like snow peas, red peppers, you get the idea.

Making this dish was a cinch. Just cook some shallots and garlic in some oil then add in the chicken. Once the chicken is cooked through, you’ll add in a sauce that is fantastic. The sauce is a combo of sugar, soy sauce, fish sauce, salt, some garlic chili sauce, and corn starch. Once it starts cooking with the chicken it starts to thicken (yes, that just rhymed), and coats all of the meat. Then that’s it! You’re done.

I served my chicken over some brown rice that I cooked (and made slightly crispy because I wasn’t paying attention), but it was fabulous! I think on my next attempt, I’ll make just a bit more sauce.
