Looking at a spaghetti squash, you would never guess that was lies inside is this interesting vegetable. Just roast that veggie in the oven (or microwave it too) and magically you come away with a squash that looks like pasta…now that is my kind of veggie!
I came across this recipe on the oh-so-fabulous Tasty Kitchen site. Seriously I love this resource for recipes. When I saw that it was spaghetti squash with some cheese tortellini, fresh lemon juice, frozen peas (a staple in my freezer), and then topped with Feta cheese, I just had to try this recipe.
I was so intrigued by how this dish would taste, so I ran to the grocery store and then started cooking! What I found was that spaghetti squash not only looks very cool, but it really takes on so many flavors as it has a pretty neutral taste. Combining lemon, dried basil, dried oregano, garlic powder and salt and pepper made the squash scream with Italian flavor, and it worked beautifully with the tortellini thrown in.
Trust me when I say that I understand how strange this recipe sounds. But also trust me when I say how fabulous it tasted…you really ought to give a shot. First off, it’s pretty fun to work with the spaghetti squash. Second, the flavors in this dish are awesome. Third, frozen peas and cheese tortellini make me happy, so maybe they will make you happy too!!

Thanks for this great post:) I have successfully cooked this recipe and am just waiting for the squash to cool a bit so I can scrap the spaghetti out.
I'm not a cook nor do I enjoy it, however I was inspired by your post and amazingly surprised at how easy and fun this dish was to make.
