I may have mentioned this over the years, but radishes aren’t my favorite veggie. I mean I’ve never met a vegetable I don’t like, but radishes are never anything I crave…but that might be changing after finding this Roasted Radishes recipe.
I love following the site PureWow…do you? If you don’t, you should. It’s got great recipes, how-to’s, tips and tricks for home, travel, beauty and more, plus must have products. You can also get emails that are focused on your local(ish) big city. And something about them raving about Roasted Radishes caught my attention.
It could be that just about any veggie roasted is suddenly 5 times better tasting. Or it could be that I was intrigued that there was a cooking method that might get me excited about radishes. Plus it doesn’t get much easier than roasting vegetables. All of those things combined let me know that I had to put this recipe in the rotation sooner than later.
And I’m so glad I did. This was actually something that I baked up over my lunch break because it was so quick to put together. Just toss your cleaned radishes with olive oil, lemon juice, salt, and pepper…that’s all. Then bake at 400 degrees for 20-25 minutes. Ta da, side dishes don’t get much faster. And can we talk about how this is a healthy way to get your veggies into your diet?
And the result…let’s discuss, because you may be as curious/skeptical as I was. The texture reminded me a bit of a turnip (which is a HUGE plus in my book). Any sharpness or bitterness that I associate with radishes was completely gone, and instead the flavor was mild and almost buttery from the oil. I think had I continued roasting these radishes for another 3-5 minutes, they would have melted in my mouth. But alas, a conference call was calling my name (darn you, “work”!). Plus the radishes are fabulous right out of the oven. However, when I smelled them, I knew a little vinegar (rice vinegar in this case) over the top would be fabulous…and I was SO right! I truly will never look at radishes the same way. As dramatic as that sounds, it’s true.
Who knew how good these would be?! I am happy to say that I will definitely be craving radishes in the future. And whether you love radishes or turn your nose up at them, this new side dish may just question everything you thought you knew about this veggie.
