Pimento Cheese…It’s New to Me!

You may or may not believe it, but I’ve never had Pimento Cheese before. Now it’s not because I live a sheltered life…far from it when it comes to food, my friends. My mom and sister are big fans of Pimento Cheese, but growing up it just never sounded appealing. However after much consideration, I thought it was time to give Pimento Cheese a whirl.

I had stumbled upon a Pimento Cheese recipe on Pinterest a few weeks back, and it sounded darned good. I must say, I’m quite glad I finally got around to making this snack from scratch. While I didn’t quite know what to expect in the taste, I was pleasantly surprised. One thing I enjoyed was that I had total control over what went into the dish.

That started with the cheese. I had to go cheddar…no doubt there. And because I was adding several flavors to it, I went with a mild cheddar. Next time, I’d be totally open to going a sharp cheddar route, and you better believe there will be a next time!

Now having not had Pimento Cheese before, I went for a less sweet taste and really loved it, quite honestly. Some mayo, a little salt, pimentos and just a tiny bit of the pimento liquid and we were ready to go!

I loved snacking on this cheese with crackers, and my mom and sis love it on a sandwich. I decided to crank it up a notch and did a grilled cheese. The ooey gooey, oh so rich sandwich was seriously good!
