In doing a search on my blog, I’ve realized that I do a lot of cooking with Zucchini. It’s so good though, so can you blame me?! I didn’t think so. 😉 So here I am cooking up zucchini recipe #101 (not really) called Cheesy Zucchini Rice.
I spent the weekend with the fam on the farm and came back with a few zucchini fresh from the garden. I love that, and so I knew this week I just had to make something with zucchini. After a quick Pinterest search, I found this recipe. I’m a sucker for cheese, rice, and zucchini so this was a total no-brainer. It’s very similar to a cheesy broccoli & rice dish, I thought.
This dish came from a site called Buns in My Oven (funny, no?), and couldn’t have been easier. Just brown the rice a bit in some butter, cook it in chicken broth, and when it’s done, stir in some sharp cheddar cheese, grated zucchini, garlic powder and salt and pepper. Pretty darned easy, I must say.
As far as kitchen equipment goes, it’s pretty minimal. A saucepan to cook the rice in, a box grater or food processor (your choice) to grate the zucchini, and if you are hand-grating your cheese you’ll need the grater for that too. Personally I like the finely shredded pre-bought cheese for saving time and it also melts down pretty well.
