Last week I talked about how I was really hit by the struggles of my gluten-free friends out there, and how difficult it was at times to find good food options. Well while this post doesn’t solve the eating out problems, it does offer another flavorful gluten-free option with this Cauliflower and Parsnip Soup.
I love a great soup, but to me it has to be warming, flavorful, and I prefer veggies in mine. This soup checks all of those boxes. It has great spices that add both flavor and warmth, it’s chock full of veggies, and is also really healthy, which is a huge bonus in my book!
Here’s the deal with this soup…you roast cauliflower, parsnips, onion, and garlic together along with some seasonings to get maximum flavor, then put the roasted vegetables in a pot and finish cooking them in chicken stock and water. Then my favorite part was that I had an excuse to use my immersion blender to puree the soup…it’s just so darned fun! Taste it and finish it off with any necessary seasonings, and enjoy.
I was a bit worried that the soup would be on the boring side, but it wasn’t. The spices I used to season the veggies included salt, pepper, ground chipotle pepper, and smoked paprika and they really kicked this soup up about 10 notches. I topped the soup with a little sprinkle of smoked paprika (goodness I love that spice!)
This dish was a total winner all around! Now I don’t want you to think I’m going totally gluten-free over here…you’ll find plenty of carb-happy recipes, but I am definitely looking forward to finding more great recipes that work for my friends who are cooking gluten-free. But a life without carbs, would result in a sad Kelli, which no one wants.
