I know there are a lot of you out there that are like me and enjoy eating breakfast for dinner. This week I had a lot on my plate (not literally), so I was really wanting some comfort food. For me, there is something that makes me all warm inside when I think of breakfast food for a meal other than breakfast.
One thing I realized was that I haven’t ever made pancakes from scratch. I’ve always used a box mix and thought that could be a fun challenge. I came across a Cinnamon Pancake recipe on this great site called Eating for England. It looked and sounded so good that I knew this was one I had to try.
Now pancakes aren’t the most healthy food in the world…I realize that. So I changed up the recipe slightly and used whole wheat flour in place of all-purpose flour. I also substituted Splenda for granulated sugar. In addition, I have some sugar-free imitation honey on hand that I use frequently to reduce the amount of sugar I eat. I figured any little alterations I could make without sacrificing flavor would be worth it. If I had egg substitutes I would have used those instead of the eggs, so go for it if you have them on hand!
These pancakes were delicious. How could they not be, really?! They had bits of cinnamon butter throughout the batter, causing the butter to caramelize a bit as the pancakes were cooked. Oh so good! This is definitely a recipe I would recommend. It was really fast to throw together and made for a perfect weeknight dinner when I was craving breakfast.
