Woohoo, I was baking away this week and I was making a galette from the fabulous Giada de Laurentiis! This was a recipe that I had seen on her Giada at Home show recently and was chomping at the bit (perhaps literally) to make. So I happily bring you this Apple Galette with Sour Cherries and Goat Cheese dish.
Galettes are basically a free-form pie, and are awesome because they are rustic and hard to mess up. My mom used to make galettes occasionally when I was growing up filled with yummy fruit, and it was something I’d been wanting to make for a while.
So let’s talk about what you need for this dish. Probably the thing I was most concerned about finding were the dried tart cherries, but thankfully I found them at Hy-Vee without a problem. I did have to grab some Cardamom and Braeburn apples too. And one thing to note is the recipe calls for arrowroot, but if you can’t find that, you’ll see I used cornstarch, which is a great replacement.
Here’s one thing I love about Giada…just because she can make her own dough doesn’t mean she always needs to. I know I’m a crazy, busy girl pretty regularly, so when I can cut corners a tad, I will. So that is where pre-made puff pastry comes into play. Talk about a time saver. And the fact that the galette looks rustic is fabulous, because it will be gorgeous without a lot of fuss.
As for any helpful kitchen tools, you know, it’s the usual: handheld juicer, veggie peeler, and my trusty Silpat. Otherwise you should be all set.
