We’re playing mind tricks this week, friends! The title pretty much sums it up what I was up to this week…a dish resembling couscous but made with cauliflower instead! I was looking at Pinterest one night and saw a Cauliflower “Couscous” recipe that fascinated me. It comes from a site called A Thought for Food, and I know I’ll be visiting this site often based on some of the interesting recipes that I’ve seen.
Essentially it was a pretty classic couscous recipe with onions, garlic, cranberries, parsley, pine nuts, and some spices minus the couscous, of course. So why did I decide to try this recipe out? Because I can. Haha, just kidding. I wanted to not only show how versatile of a veggie cauliflower really is, but I also wanted to show a more healthy, gluten-free option.
One point about this recipe that I always appreciate is that it is calling for easy to find ingredients and often ones you already have on hand. I only needed some fresh parsley, cauliflower and pine nuts. Love that!
Now there are a few things about cooking this recipe that I wanted to highlight. First of all, I didn’t totally go in the order of the instructions I found. If I’m needing toasted nuts of some kind for a dish, I like to do that first off, so that I’m not waiting on them later on or risk burning something while I’m working on a task that could have been done earlier. Second I would definitely recommend separating the cauliflower and running them through the food processor in batches, so that you won’t over process some pieces and not process others enough.
Obviously you’ll need a food processor for this recipe. You could try a blender but I really don’t think you’ll get the same consistency. (I feel like the amount of recipes I make using a food processor really advocates adding one to your kitchen.) Otherwise you just need a good knife for chopping and a large skillet/pan to cook with.
The rest of the recipe is pretty straightforward. The entire dish will come together in one large pan on the stove, which I can always appreciate since I know I’m the one doing the dishes too. This cauliflower “couscous” makes a fantastic side dish. I ended up serving it with a mahi–mahi filet but it would be great with chicken or pork, too.
