If you have been following my blog for a while, then it’s no secret that I have a special place in my stomach reserved for quinoa. It’s super good for you, plus it’s simple to make. Then you just add whatever you want and make it work in so many dishes. So there I was, pinning away on Pinterest one night and came across this quinoa “fried rice” dish. I was really curious if this could really taste like fried rice, so I added it to my “Good Enough to Eat” board and made a mental note to make it.
This was the week, so I grabbed a couple of items at the store I needed and headed for the kitchen. This really was an easy dish to make. I made the quinoa ahead of time. It just cooks on the stove top as you would cook rice, if you haven’t made it before. Then I did my prep work by cutting up a couple of red peppers, a tomato, and some green onions.
Once that is done, you just need one large pan or a wok and begin by scrambling the eggs, then when they are done, you cook the red peppers, green onions, and garlic for a minute or two, add the tomatoes, then the quinoa, and finally some seasoning. I was actually pretty excited to see that this recipe calls for soy sauce (which I really love and could eat by the spoonful…not that I would, but I could!) and also fish sauce, which I needed for a dish I made previously featuring Brussels sprouts. I had been hoping to find something else to use the fish sauce with, so making this was clearly in order.
I have to admit, this was darned good! It really did taste a lot like fried rice but with the quinoa, I was happy to go back for seconds. I served this with some shrimp I had sauteed in a little butter and olive oil plus some minced garlic and crushed red pepper flakes. I wanted to have some extra protein, and the shrimp were the perfect compliment! One quick note on shrimp…I tend to buy the uncooked, deveined (sometimes peeled if I can find them) frozen shrimp in the store, because if you are land-locked like I am, this is your best way to get the freshest seafood. They thaw easily and taste so delicious.

Seriously just being reminded of this soup made me sigh and wish I had it right in front of me. The heartwarming dish features Kale (such a great leafy green veggie for you), tortellini (hello pasta!), vegetable stock, diced tomatoes, garlic and crushed red pepper flakes for a kick. What a perfect soup for Fall and Winter evenings when you want to curl up with a “warm you from the inside out” soup. Hope you enjoy it as much as I do—and definitely ease up on the red pepper flakes if you don’t like the heat.
