I don’t know what it is, but I have grown to really love scones. Don’t get me wrong, I happily enjoy just about all breakfast food, but it must be the buttery pastry that really makes me happy. Overall I try to eat pretty well every morning, so a scone is always a bit of an indulgence. I’ve tried my hand at many a scone recipe on my blog, and these Pomegranate Scones are some of my favorites.
I couldn’t resist this week in our small town grocery store when I spotted pomegranates to grab a couple immediately after I got over the surprise of them being in the store! I hadn’t cooked or baked with them since week one of my blog which just feels like ages ago, to be honest. So it seemed like now was the perfect time. And there was a recipe for chocolate fudge pomegranate cookies that I still salivate thinking of, so I knew I needed to bake with them. And it’s been frankly too long, since I’ve made scones so when I kept seeing 2 pins on Pinterest for Pomegranate Scones, I knew there was no turning back.
I found 2 recipes that were nearly the same based off of the scone recipe from the site Making Today Beautiful so I did a hybrid of both, and it was great! One recipe from Fine Craft Guild had orange zest which I liked.. I love adding orange zest to sweet treats to add another layer of flavor so including orange zest was a no brainer. Scones are great because you can really customize to your taste, so since it was just half a cup I opted to use heavy cream in the scones as opposed to milk or half and half, etc.
And I really like the scones when they are in a triangle shape…I guess it feels more traditional. So I just shaped the dough into a round and then cut into 8 pie-shaped pieces. Then they were ready to bake. I added some large sugar crystals to the top for decorative purposes before popping them in the oven. Then the scones are baked until they are golden brown on top but still tender and then dig in.
I loved them fresh out of the oven, and the bits of pomegranate arils were perfect! They added a hint of sweet yet tart flavors, and I thought the seeds provided some needed texture with each bite. They were officially a hit!
I cannot wait for you to try these out. Scones are so easy to make yet they are definitely impressive and hit the spot every time. I mean who can resist a delightful pastry? Not this girl!
