I love this time of year! The green grass, the growing crops, the blue skies, the occasional thunderstorms, the ability to go golf when I please, and the warm weather…well they just make me a pretty happy girl. You know what else I love? I love fresh veggies from the garden. I got my hands on some fresh green beans and this Lemon-Dill Green Beans recipe appeared on Pinterest and I knew it was a sign that this was the next dish I was making.
Over the holiday weekend I was visiting my parents. Every day my dad came into the house with at least 1 new haul of veggies he picked from the garden. The first were tons of zucchini that he then insisted I take with me to a cook out for grilling with my friends. (Kinda glad he did, because they were very good…thanks goes to my friend Nicholas for grilling them up!) Then the next couple days it was fresh green beans and more fresh green beans.
Before I knew it, I had over 2 pounds of beans that I had brought back home with me, and luckily this recipe jumped out at me and it was next on my list. All I needed was a lemon, fresh dill, and some course mustard and I was good to go.
I have a steamer I got for Christmas a year or two ago, so I was excited to have a delicious reason to bust it out to steam my beans. That was the extent of the cooking this dish required. While the beans steamed, I just whisked together some EVOO, fresh dill, salt and pepper, fresh lemon juice, half of a shallot minced and some coarsely ground mustard. Once the beans are done just toss them with the dressing and let them marinate for about 10 minutes and enjoy.
These would make a perfect side to a filet of fish, some chicken or really anything you’re cooking. I loved the bright flavors that the lemon and mustard brought to the beans. They went from boring beans to something really special in no time at all. And the bits of shallot and dill not only made for a pretty presentation but also helped mellow out the tartness of the lemon and added some extra texture to this side dish.
If you find yourself with some fresh green beans on hand, this is definitely a side worth trying. Not only is it fast, but it’s super flavorful, easy to make, and goes well with lots of different meals.
