I am a big sweet potato fan. I always enjoy mine baked like a potato with some butter and sometimes a little brown sugar. But I was so intrigued by this smashed sweet potatoes recipes I just had to give it a shot. And once again Pinterest happened to lead me to the recipe on the Creekside Cook blog.
The potatoes get peeled and then sliced up, and then they are cooked in some simmering water. One thing I’ll say is I didn’t cook mine quite long enough. The directions said until they were starting to get tender and I should have followed my instincts, so next time I’ll cook them longer.
Let the potato slices totally dry out on the outside before you brush each side in butter and olive oil. Then sprinkle both sides with this amazing spice mixture. You can absolutely get creative here. This spice mixture was brown sugar with chili powder, chipotle chili powder, cumin, salt, garlic powder, onion powder, and paprika. Wowza!!
I can most definitely imagine these potatoes to a side to a delightful steak, or even pork or chicken. Plus they would make a great side for your Thanksgiving spread. Just know your audience and don’t crank up the spices too much if your friends and family are scared of spicy food. But it’s not crazy spicy, in my humble opinion…just has a good heat!
I so love how this dish turned out, I gotta say. I was slightly skeptical, but had no reason to be. These were easy (although I will boil the potatoes longer next time), chock full of flavor and the end result was simply delightful! Serve these treats right out of the oven and all of your family will go crazy for them!
