So I almost didn’t have a post for you this week. I’ve been going non-stop and also early this week an important family member passed away. I really just didn’t want to cook. But here’s the thing, my uncle who left us was a big fan of food of all kinds, so it really propelled me to suck it up. So this week I bring you Ale and Cheddar Soup.
My uncle was a giant chocaholic (which I loved about him since I am too), so it would have been appropriate to make a quadruple chocolate something or other. But since I baked last week and like to change things up, I thought of something else he loved that we would also bond over…beer. He introduced me to Guinness when I was 21, and so I thought this soup, which I’ve been wanting to make for a while, was the perfect dish to get me in the cooking spirit. Plus I had everything but the bacon, cheese, jalapenos and onion on hand, which makes my life easier. While I didn’t break out the Guinness, I did have some Octoberfest beer on hand, which was perfect in this recipe.
This soup was easy and packed with flavor. Chop up some onions, celery, and jalapenos while you cook the bacon. You’ll cook the chopped veggies in some of the bacon drippings then add some garlic and thyme. Add butter and then flour along with some chicken stock and 2 bottle of your favorite ale and cook. Finally throw in cheddar cheese, cream, Dijon mustard and Worcestershire sauce. And ta-da, you have yourself a kick-ass soup.
The smoky flavor of the bacon, heat of the jalapenos and cayenne pepper, the beer and oh the cheese…well it is just fantastic. And as the temperatures drop this soup is perfect for warming you up! I know that my uncle would have most certainly approved of this recipe.
