Apple and Bacon Stuffed Acorn Squash Pretty Much Equals Fall

It’s Fall, and we are all pretty aware of that, right? So I really wanted to make a dish this week that would smell and taste like Fall…and by the way, I nailed it! I found this great Apple and Bacon Stuffed Acorn Squash recipe from the site Heather’s Dish, and as soon as I saw it, I was sold. I mean what else seems more like Fall than squash and apples,  and let’s face it: bacon is perfect in any season.

I really love cooking with squash: Butternut squash, Spaghetti squash, and Acorn squash…yum! I tend to eat more acorn squash than any other variety and realized I’ve never featured it on my blog, so it was definitely time. I’ve made some fabulous butternut squash dishes and you must check out this spaghetti squash and tortellini dish I made a while back that was nothing short of fabulous.

One reason I love acorn squash is because it’s easy and tasty. My favorite way to make it is baked with some butter and brown sugar, and I have to confess that I haven’t eaten it stuffed with anything before, so I figured this would be a great recipe to try out.

The dish was pretty easy to put together. Just cut an acorn squash in half and scoop out the seeds. Then bake it for 20-30 minutes until it’s nice and tender. While it bakes, cook some bacon and chop up 3 carrots and an apple. Cook the carrots and apple in the bacon drippings until tender, add some almonds followed by a little white wine. Mix in some heavy cream, maple syrup, and bread crumbs. I thought about leaving out the bread crumbs but it really helps the stuffing come together, so I stuck with it. Finally add the crumbled bacon and spoon it into the acorn squash. Bake them for another 5 minutes and serve.

As I was cutting and baking the squash, it totally smelled like Fall. Then with the bacon cooking, followed by the apple and carrot mixture on the stove, not only did my kitchen smell fantastic, but it also once again filled up with the smells of Fall. I have to say I wish this post was scratch and sniff, because the world would be a better place!
