I just can’t stay away from pasta or goat cheese – I’d apologize for it, but I’m not sorry. I love my carbs and my cheese, and it’s my prerogative to do so. That being said, I found this Lemony Pasta with Goat Cheese and Spinach dish from Martha Stewart, and as I started reading the recipe I realized this is a healthy pasta…score!
So why do I say it’s a healthy pasta? Well you don’t have a big heavy sauce on the pasta. This one is made from 4 ounces of goat cheese and some pasta water. So no oil, sugary tomato sauce or heavy alfredo make an appearance here.
Another thing that makes this pasta healthy is that there is an abundance of green. So we have lots of baby spinach, 2 cups of chopped cilantro, and 3 cups of chopped parsley. The greens overtook the bowl for a few minutes when trying to combine everything, but eventually I won and they wilted away.
Now this recipe makes a ridiculous amount of food, so I think in the future, I’ll be cutting this recipe in half, but I would leave the amount of goat cheese the same so it’s slightly more creamy. An abundance of food is a problem especially when you tend to only feed yourself when living alone…if you don’t hear from me soon I may have turned into this pasta dish. Just warning you. But at least if I do, goat cheese will be involved so I can go happily.
So if you’re craving pasta but don’t want to feel super guilty, then this is the dish for you. And truly it’s a cinch to make. The longest part of the process was removing the herbs from the stems and chopping them…so yeah that makes this a fast & easy dish.
