Step by Step Instructions:
This colorful, tasty Whole Roasted Radishes side dish is perfect for a quick weeknight meal. Here’s what you’ll need: Radishes (I used a package from the store that had them already trimmed, but you’ll want about 2 bunches trimmed), Olive Oil, Lemon, Salt and Pepper.
First things first, preheat your oven to 400 degrees. Then start off by juicing half of a lemon.
In a medium-sized bowl, place the trimmed and cleaned radishes along with 3 tablespoons of olive oil, and a tablespoon of lemon juice.
Add the salt and pepper. I only added a teaspoon or so of salt and about 1/2 teaspoon of pepper.
Stir until the radishes are well coated with the ingredients.
Now either use a baking dish or rimmed baking sheet. I used the latter along with some non-stick foil that I then sprayed lightly with cooking spray (just to be safe). Then pour the radishes onto the baking sheet in a single layer. Bake for 20-25 minutes.
Here are the lovely roasted radishes in all their glory. Roast until the edges begin to brown and they are tender when tested with a paring knife. Then enjoy while they are still warm. Happy roasting, my friends!

1 tablespoon lemon juice
1½ teaspoons kosher salt
1 teaspoon freshly ground black pepper

1. Begin by preheating your oven to 400 degrees. Then clean your radishes and juice half a lemon.
2. In a medium-sized bowl, combine the radishes, oil and lemon juice and toss well. Then add some salt and pepper and toss again.
3. Once the radishes are thouroughly coated, place them in a baking dish or a rimmed baking sheet lined with foil. Bake at 400 degrees for 20-25 minutes or until the radishes are browning on the edges and tender when a paring knife is inserted.
4. Serve while still warm and enjoy!
