Two-Ingredient Creamy Garlic Broccoli

Step by Step Instructions:

Talk about easy, you just need the following and about 5 minutes to make this side dish: Broccoli Florets (about 3 1/2 cups – I love the steam in the bag kind), 1 Lemon, and Creamy Garlic Hummus.


Start off by cooking your broccoli. I just steamed mine in the bag according to the instructions. Although next time I might not steam them the full 3 minutes so they hold up to stirring better. Then add 1/2 cup of the garlic hummus and some fresh lemon juice (I used the juice of 1/2 a lemon), and some freshly ground pepper.


Then stir the broccoli so the hummus coats each floret. Then eat! Seriously, that’s all there is to it. It really doesn’t get much easier, does it?! I chose to serve mine with a salmon filet, but it would be amazing with just about any meat you choose.



Makes 4 cups broccoli

Ingredients:
3 1/2 cups broccoli florets
1/2 cup creamy garlic hummus
black pepper + lemon juice to taste

Preparation Instructions:
1. Steam, boil, roast or grill your broccoli florets.

2. Toss the warm florets in the hummus — coating it as you would pasta with pasta sauce.

3. Serve warm or place in the fridge to chill. This broccoli is delicious served both warm and chilled.

4. Add lemon juice and black pepper over top to serve.

Customize it! If you are not a garlic fan, you can use any variety of hummus, including lemon, chili, roasted eggplant, olive, parsley and more.

    Sounds good! I don’t like hummus usually so does it basically just give the broccoli flavor? Or will I notice a lot of hummus taste?

      Hi Heidi! It really just gives the broccoli some flavor. And the lemon juice thins out the hummus a bit so you don’t get a super hummus-y (that’s a word right?!) taste. 😉
