(Origin of recipe is from the kitchen of Katie Hagan.)
Step by Step Instructions:
This Taco Ranch Dip couldn’t be easier. You will just need the following ingredients: Mayo (I prefer the olive oil variety as it’s reduced fat), Rotel (whatever your favorite Rotel is – I decided on the original/medium spice level), Cheddar Cheese (I went with Mild Cheddar cheese, but I’m sure Sharp or a blend of cheeses would be fine), Sour Cream and one package of dry Ranch seasoning.
Begin by adding an entire can of Rotel to a bowl. Don’t drain it, please. And whatever your preferred spice level, is fine – just pick your favorite Rotel.
Then sprinkle in the packet of Ranch dip seasoning.
Add 1/2 cup of mayo to the bowl.
Next up add 8 ounces of sour cream. I always prefer the light variety, so it’s up to you.
Then stir up the dip a bit if you don’t mind.
Add about 1 cup of cheddar cheese to the bowl. You can always add more if you’d like but I’d say a minimum of a cup of cheese is a good start.
Then stir up the Taco Ranch dip and cover with plastic wrap. Place it in the fridge until you’re ready for the dip. Then just serve it with your favorite chips or veggies, and enjoy! I went with some tortilla chips but I bet corn chips would be delightful as well. Happy dipping my friends!
