Soup Time…Asparagus Soup, That is

I was looking for a healthy soup recipe that would hit the spot during this dreary weather we had this week in the Midwest. I instantly grabbed my new cookbook by Giada de Laurentiis called Weeknights with Giada (see the link at bottom of post for information on purchasing the cookbook). I remembered flipping through the book at her book signing and finding a ton of recipes I wanted to try out.

As soon as I flipped to this Asparagus Soup recipe, I knew I had found a winner. It didn’t call for much fat (just 2 tablespoons of butter), and when I realized that there was fresh basil and goat cheese involved, I was sold. The soup calls for asparagus (obviously) and leeks, and I always enjoy a chance to cook with a vegetable like a leek that I don’t use very often. The dish cooks up very quickly (within 15-20 minutes) and then you just blend it and voila! You’re ready to eat.

This recipe was great because it had me make both soup and goat cheese balls with basil. I have to tell you that the combo of the smooth asparagus soup with its milder flavors along with the goat cheese balls that are served on top and melt into the soup are perfect. This is one quality of Giada’s recipes that I love…she knows how to perfectly combine flavors to create some really special dishes. Yum!

To make this dish you will need a couple of kitchen items. The soup is blended, so you’ll need to use either a blender or an immersion blender to combine the ingredients. I used the latter item as I’m always excited for the opportunity to use my shiny handheld blender. Then you’ll need a small scoop or spoon to form the goat cheese balls.
