Learning to Love Salads – Part 8: Southwest Chicken Chopped Salad

I’m still in the midst of my mission to love salads, so when I came across this recipe on the Tasty Kitchen site, I knew this was the week to make it. It was crazy busy this week between Labor Day, work, an evening meeting, a jewelry party, and a football-filled weekend-o-fun and I didn’t have much time to cook. I knew that if I could chop up a few ingredients I would be able to fly through this recipe – and I did. Hello Southwest Chicken Chopped Salad!

What I just realized in writing up this recipe is that there was no cheese involved, and yet I still enjoyed this salad. I do love my cheese and usually that is a selling point (subconsciously) when I pick out a salad. Therefore, I must really be growing as a person to have still been drawn to this dish. (Or at least I like to think so!)

Overall making this salad was very straightforward. Buying a rotisserie chicken at the store and using the breast meat for the salad made this super easy. And I find chopping up green peppers, scallions, lettuce, cilantro and avocados to be somewhat therapeutic. I can turn on some great music and totally zone out while I do my prep work – love that!

The dressing is really where a lot of the flavor comes in. It is a base of mayonnaise and sour cream seasoned with ranch seasoning and taco seasoning and salt and pepper. It does say the fresh lime juice is optional, but in my opinion it definitely isn’t. There is something so delightful about what lime juice (or lemon juice) can do to a dish. It makes everything taste fresher and just highlights all of the other flavors. So please grab a fresh lime and juice it. The recipe calls for 1/2 tablespoon of lime juice, but I juiced the whole lime and I’m so very glad I did.
