I found myself this week scouring through my cabinets trying to figure out what to make for my blog. I stumbled across some chai tea bags and remembered back to these fabulous cupcakes I made last year that had the chai tea infused in them. I thought it might be fun to see what else I could make featuring tea.
I love tea. I really do. Sure I start most mornings off with a cup of coffee, but tea still wins my heart at the end of the day. Having lived in England for a bit, Earl Grey and English Breakfast teas are at the top of my list, which is why these chai tea bags are still in my cupboard taking up space. They obviously aren’t my first (or even second) choice for a cup of tea.
My sister had sent me some great Cooking Light muffin recipes the other day and one of them caught my eye. I settled on this lovely Pistachio-Chai Muffin recipe. Sounds a little bizarre perhaps? Trust me that this muffin is a total keeper. What intrigued me so much about the recipe was the fact that it called for chai tea bags, but it didn’t call for me to steep them. I re-read the recipe to make sure I read it correctly…I did. You are supposed to cut open the tea bags and use the actual tea leaves in the bags. How interesting!
So I was off to compile the rest of my ingredients. Surprisingly the only thing I needed to go and buy was buttermilk. I was tempted to try to concoct my own but I didn’t have the time to re-make the recipe in case they didn’t turn out just right. But this was great timing, because I’ve been trying lately to really save some money and buy minimal ingredients…grocery shopping can get seriously expensive!
Once I had my buttermilk, the recipe came together in a flash. In less than an hour, I had this amazing chai tea scent perfuming my apartment as the muffins baked. Please make this recipe. It’s easy, quirky, and absolutely delicious. Plus it’s a Cooking Light recipe, so it’s been lightened a bit. I hope you enjoy! In fact, I think hear a muffin calling my name…yep, I sure do…better go answer the call!
