Step by Step Instructions:
Homemade Pimento Cheese is a cinch to make. Here’s what you’ll need: Salt, Mayo, 4 ounces of jarred Pimentos, a Yellow Onion, and 2 cups of Shredded Cheddar Cheese.
Quarter an onion and begin grating the onion until you have about a teaspoon of onion.
Next up, grab a colander and drain the pimentos. I took one of the jars and captured some of the liquid from the pimentos that drained off and reserved it just in case.
Once the pimentos are drained, give them a good chop so you don’t have big pieces of pimentos.
Grab a bowl and add the cheese, 3/4 cup of mayo, the teaspoon of grated onion, chopped pimentos and 1/2 teaspoon of salt.
Combine the pimento cheese and taste and adjust seasonings. I decided to add some of the pimento liquid from the jar (about a teaspoon) to the cheese and combine…I am super happy about that decision.
Then your cheese is done and you’re ready to enjoy it! It was delicious with crackers, on a sandwich or even a grilled pimento cheese sandwich. Can’t wait to hear how you eat your pimento cheese! Yum, yum, yum! Happy cheesing!
Ingredients:
2 cups cheddar cheese, shredded
3/4 cup mayonnaise
1 (4 oz) jar sliced pimentos
1/2 teaspoon salt
1 teaspoon grated yellow onion, optional
Preparation Instructions:
1. Begin by cutting a yellow onion into fourths and and begin grating the onion until you have a teaspoon. This step is optional, but I thought it added a TON to the pimento cheese.
2. Next up is draining the pimentos. I reserved some of the liquid…great choice, by the way! Once they’re drained, give the pimentos a good chop.
3. In a large bowl stir together 2 cups of shredded cheddar cheese, 3/4 cup of mayo, the drained pimentos, 1/2 teaspoon of salt and the grated onion until it’s well combined.
4. Taste and adjust seasonings as needed. If you want to add a little more pimento flavor add a little of the liquid from the pimentos…I did and it made it a little less sweet, which I really liked. Enjoy!
