It’s been a long time since I have made granola. And in a continued effort to snack healthier, I thought this week would be a perfect time to try out a new granola recipe. Pinterest (per usual) pointed me in the direction of this Coconut Oil Honey Almond Granola that I couldn’t stop thinking about.
I heart coconut oil. The smell is divine and it is my favorite way to pop my popcorn, so having coconut oil on hand is always a must. Plus it’s a great natural moisturizer. I love to pat a little on my lips when they are feeling dry…homemade lip balm! So I really didn’t need to see anything beyond the use of coconut oil to know that this granola had to be made.
Honey is super good for you too. If you can get local honey, try to incorporate that into your daily diet…especially if you’re like me and suffer from seasonal allergies. And it’s a wonderful natural sweetener. The recipe does call for some brown sugar as well, so just be aware that is an additional sweetening agent in this granola.
Finally there are almonds. I couldn’t make up my mind on which type of almonds (whole, slivered, sliced…so many options) I wanted, so I bought a 1/2 cup package each of slivered and sliced almonds to get varying textures. What I found to be pretty cool was you separate the almonds into 2 batches. One batch gets finely ground and the other a rough chop. That way the flavor of almonds is throughout and the textures vary. I loved this idea too so that I didn’t have great big chunks of almonds in each bite to protect my teeth.
You can flavor the granola a bit with some almond extract to extend the almond flavor and you can’t go wrong with adding some vanilla extract too. Then just toss all of the ingredients together, spread on a lined baking sheet (with edges) and bake for 5 minutes, stir the granola and bake another 5 minutes. Pour the granola out on waxed paper and once it’s cool, break it into small chunks and store in an air-tight container.
I have to say that all other granolas I’ve had are officially a distant memory. This recipe is delightful! I’ve loved it as a snack and even replaced my usual cereal with a bowl of granola and was a completely happy camper. I cannot wait to try it out on some Greek yogurt with some fresh berries next. Yum, yum, yum!
