We all know that this weekend is Super Bowl weekend and it’s prime time for making your favorite snacks to take to a Super Bowl party. So I figured this week I better give myself a good snack to try out.
I was thinking that most of the parties aren’t offering many “healthy” options, so you might as well bring your own. This dip I came across is a lightened jalapeño popper dip, which can’t be a bad thing, right?! It comes from a site called Ring Finger Tan Line (sounds intriguing don’t you think?), and I foresee myself checking out this site in the future to see what other recipes she comes up with.
If you’re a fan of cream cheese, jalapeños, and a little crunch, then my friends, this is the dip for you! As I’m writing this, the dip is more than half gone, and my trial run for game day proved that this dip will definitely be making another appearance in a couple of days.
So how’s this come together? Quite easily actually. The only prep work is to finely cut up 2 jalapeños. I went ahead and made sure the cream cheese was softened, and then I mixed it with some fat-free Greek yogurt, and mayo (well I had Hellman’s Light on hand, so that was what I used). Then add some Mexican-blend cheese, shredded Parmesan cheese, jalapeños, and 2 ounces of diced green chiles plus some salt and pepper to taste. Then put it in an oven-proof pan, topped it with a panko bread crumb/parmesan cheese/melted butter mixture and baked. To give it a nice, crispy crust just broil it on high for a couple of minutes (keep an eye on it), and it’s time to dig in.
I served this with some bite-sized tortilla chips, but a baguette or your favorite cracker would be delightful too.
