Crock-Pot Salsa Chicken

Step by Step Instructions


Crock-Pot Salsa Chicken is yours with only these 3 ingredients: 6 boneless, skinless Chicken Breasts, a jar of your favorite Salsa (you can see I went with Medium level heat but Mild works great if you want to minimize the heat), and Mexican-blend shredded Cheese.


Grab your crock-pot and place your chicken breasts in it. I did trim mine a bit.


Then pour about 2 cups of salsa over the chicken.


You’ll see I turned my crock-pot onto high heat, and then you’ll cook it for at least an hour and a half.


After an hour and a half I preheated my oven to 425. I checked my chicken and could see it was cooked.


I sprayed a baking dish (this one is about 9″ x 9″) and transferred the chicken over.


Then most of the salsa from the crock-pot gets spooned over the chicken so that it doesn’t dry out.


Sprinkle about a cup of the cheese over the top of the chicken. Then bake for about 15 minutes until the cheese is melted and the salsa is bubbly, and I liked that the cheese got a bit brown too.


Here’s the chicken in all its cheesy glory! I let it cool on a wire rack and served pretty quickly out of the oven. I topped mine with some sliced green onions for some color and texture. So far I’ve eaten it with a side salad or half an avocado and it’s been fabulous. Tons of great flavor and juicy, I’m a huge fan of this super easy way to eat chicken! Happy crock-potting!!

Ingredients:
6 chicken breasts, boneless, skinless
1 jar salsa (about 2 cups) – I went for a Medium heat salsa but pick your favorite
1 cup Mexican blend shredded cheese

Preparation Instructions:
1. Begin by cleaning off any fat and nasty bits from the chicken breasts. Then place them in the crockpot.

2. Cover the chicken breasts with your favorite salsa. If you like a little more heat go with Medium but if not, Mild will work great. You want to cover the chicken and will need about 2 cups. Then cook the chicken on high in the crock pot for 1.5 or 2 hours.

3. When the chicken is cooked in the crockpot, preheat the oven to 425 degrees. Spray a baking dish and add the chicken to the baking dish. Top with salsa from the crockpot and sprinkle about a cup of cheese over the top of the chicken.

4. Bake for about 15 minutes until the chicken has melted and starts to brown a bit. Top with green onions when serving if you’d like.
