Step by Step Instructions:
We’re cooking up Banana Nut Bread Waffles, and they will be yours in no time. Here’s what you’ll need: Salt, Vanilla Bean Paste (or vanilla extract), 2 tablespoons of Sugar, Milk (I went with almond milk), Baking Powder, 2 Eggs, fresh Nutmeg, 2 cups of Flour, 2 ripe Bananas, Canola Oil (or vegetable oil), Baking Soda, Cinnamon, and 1/4 cup of chopped Pecans (or walnuts).
Grab a large bowl and add your dry ingredients including the flour, sugar, a teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, 1/4 teaspoon of cinnamon, and freshly grated nutmeg (just a pinch as a little goes a LONG way).
Then whisk it all together.
In a medium-sized bowl, mash the 2 bananas with a fork until it’s pretty smooth.
Then add in a cup of milk, 1/4 cup of oil, 2 eggs, and a teaspoon of vanilla bean paste.
Then whisk the wet ingredients until they are smooth.
Pour the wet ingredients in with the dry ingredients.
Then stir until the batter is completely combined.
Add the chopped nuts to the batter …
… and stir to mix them throughout the batter.
Turn on your waffle maker.
Then cook the waffles according to your waffle iron’s instructions.
Once you’re done, you have a gorgeous, seriously amazing smelling waffle! (I made 6 waffles with this iron, and with a Belgian waffle iron you’ll get about 5 waffles.) Serve it right away and top with some banana slices, chopped pecans and your favorite syrup. So freaking good!! Happy waffling!
- 2 cups All-Purpose Flour
- 2 tablespoons Sugar
- 1 teaspoon Baking Powder
- ½ teaspoon Baking Soda
- ½ teaspoon Salt
- ¼ teaspoon ground Cinnamon
- Pinch of freshly grated Nutmeg
- 1 cup Milk
- 2 ripe Bananas, mashed (about ⅔ cup)
- 2 large Eggs
- ¼ cup Canola Oil (or vegetable oil)
- 1 teaspoon Vanilla Bean Paste (or extract)
- ¼ cup chopped Pecans (or walnuts)
- Start off by combining your dry ingredients in large bowl including the flour, sugar, baking powder, baking soda, salt, cinnamon, and freshly grated nutmeg.
- In a separate bowl, mash the 2 ripe bananas. To that, add the milk, eggs, canola oil, and vanilla and whisk until the mixture is pretty smooth.
- Add the wet ingredients to the dry ingredients and stir until the batter is well combined and smooth. Then fold in the chopped pecans.
- Turn on your waffle maker and cook the waffles according to your waffle iron's instructions. You should get about 5 waffles in a Belgium waffle maker and 6 in a traditional waffle iron.
- Finally top with your favorite toppings. I went with sliced bananas, some chopped pecans, and syrup, of course! And enjoy!!
