I know I’m not the only one who is running around like a chicken with my head cut off these days, right?! I have so much going on this month (working a full-time job, running my own business, oh and that pesky task of packing up my entire apartment) that finding time to cook (or breathe for that matter) can be a challenge. But when I came across this recipe for Creamy Pesto Chicken Tortellini on Pinterest, it seemed like the perfect recipe for me this week.
As I read through the ingredients list, I was pretty excited to find I only needed a couple of items. Then when I speed read the instructions I noticed that this meal would come together in a snap, so it didn’t take long for me to move this recipe to the top of the queue.
The only prep work I had to do was to cut up the chicken. To save on time, I bought a rotisserie chicken and cut up the chicken breasts and voila, I had the 2 cups I needed. Everything else was pretty much ready to go.
You start off by cooking up the pasta. While it cooks, whip up the sauce, which takes 5 minutes, tops. Melt some butter, add the cooked chicken and heat it through for about 2 minutes. Then add cream of chicken soup, milk, garlic, and pesto and let it simmer until the tortellini is cooked. Once cooked, spoon in the pasta and mix it with the sauce. Let it heat through another minute and you’re good to go!
This was such a fast way to get some much-needed comfort food, and it was super quick so I could easily make it over my lunch break or right after work. Not only was this a breeze to throw together, it was delicious. I loved how the cream of chicken soup almost made this taste like chicken noodle soup (my sister noticed that too), and was perfect on its own. The best part was it made a TON of food, so that meant I had leftovers to munch on for a few days.
So when you are faced with a busy week where you’re going non-stop and may have double booked yourself or given yourself no free nights…well then allow this recipe to keep you going all week long.
