Looking for a healthy breakfast option and tired of cold cereal? Trust me on this recommendation…I love this oatmeal recipe! I figured that in light of the ultra decadent cinnamon rolls recipe that I posted this week, I owed it to myself to post something healthy to balance things out a bit. This fabulous Banana, Wheat Germ and Oats Recipe comes from Cooking Light, and I make it at least twice a week for breakfast, lunch, or dinner.
The unusual part of the recipe to me is the fact that it calls for Wheat Germ. This is an ingredient that I’ve never used, but it’s easy to find (most grocery stores carry it in the cereal aisle), and I can’t wait to try it out in other recipes. It’s a bit nutty and adds something really special to the oatmeal.
The recipe itself is for 3 servings, but if you’re like me, you’re probably only making this for yourself. So to make one serving, I do the following:
Boil 1 1/4 c. water, 1/3 c. old-fashioned oats, eyeball about 1/3 of a 2/3 c. measuring cup of wheat germ (it doesn’t have to be exact), and a pinch of salt. Once it boils, turn it down to a lower heat, stirring often, for 6 minutes until it’s thick. Then serve it topped with one banana and 1 T. (or less) of brown sugar. It’s oh so very good!
I’m sure you can use whatever you want to top the dish, but the banana and brown sugar are delicious and add a nice sweetness. Give this recipe a shot if you’re looking for a healthy breakfast choice that fills you up and keeps you going all day long. Thank you, Cooking Light!! Happy eating!
