Step by Step Instructions:
Healthy snacking is sooo easy with this Cucumber Dill Hummus recipe. Here’s what you’ll need: Tahini, 2 cups of Garbanzo beans (or Chickpeas) that have been rinsed well and drained, Olive Oil, Salt, 1/2 a Cucumber roughly chopped, 1 Lemon, 1 Garlic Clove, and 2 sprigs of fresh Dill. (Not pictured: Smoked paprika for garnish)
Begin by removing the skin from the garlic. No need to chop it up.
Then juice 1 lemon.
If you haven’t worked with tahini before, it’s good to note that it’s a paste that needs to be stirred really well. So grab a chopstick, knife, little spatula…whatever you prefer and stir well.
In your food processor (or blender) bowl, add the 2 cups of chickpeas, the half of a cucumber roughly chopped, the dill minus the stems (leaves only, please), the whole garlic clove, 2 tablespoons of lemon juice, 2 tablespoons of tahini, 1 tablespoon of olive oil and 1/2 teaspoon of salt.
Pop the lid on and start blending away.
Grab a plastic spatula, remove the lid, and scrape the sides down periodically to ensure all of the cucumber and chickpeas are getting pureed. Put the lid back on and continue to blend.
Keep pureeing the mixture until the hummus is a smooth consistency. Then serve it up.
You can top your hummus with anything that sounds good. A drizzle of olive oil is really classic and I decided to add some smoked paprika as well to add to the flavor.
Garnish with some leftover dill if you have any. Then serve the hummus with your favorite additions like veggies, crackers, chips, pita bread, etc. I went with carrots and green peppers for my snack and it was delicious! Happy hummus making!!
Serving size: 1/4 cup
2 cups canned Chickpeas or Garbanzo Beans (drained and rinsed)
2 sprigs fresh Dill (washed, stems removed)
½ Cucumber (washed, skin on, roughly chopped)
½ teaspoon Salt
2 tablespoons Lemon Juice
1 tablespoon Olive Oil (or more if needed)
2 tablespoons Tahini (Sesame Paste)
1 small Garlic Clove
1. Start off by adding all of the ingredients to your food processor (or use a blender if you’d rather). Blend until the mixture is completely smooth. Stop and scrape down the sides of the bull as needed to ensure all ingredients are pureed.
2. Transfer the hummus to a serving dish. Top with a drizzle of olive oil, leftover sprig of dill and some paprika for color.
3. This hummus is great when eaten with your favorite veggies, chips, crackers, pita bread…use your imagination and enjoy!0
