Banana Nut Bread Waffles

These waffles not only smell amazing, but they taste fabulous! You'll get about 5 waffles with a Belgian waffle iron and 6 with a traditional waffle iron.

Ingredients
  • 2 cups All-Purpose Flour
  • 2 tablespoons Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • ¼ teaspoon ground Cinnamon
  • Pinch of freshly grated Nutmeg
  • 1 cup Milk
  • 2 ripe Bananas, mashed (about ⅔ cup)
  • 2 large Eggs
  • ¼ cup Canola Oil (or vegetable oil)
  • 1 teaspoon Vanilla Bean Paste (or extract)
  • ¼ cup chopped Pecans (or walnuts)
Preparation Instructions
  1. Start off by combining your dry ingredients in large bowl including the flour, sugar, baking powder, baking soda, salt, cinnamon, and freshly grated nutmeg.
  2. In a separate bowl, mash the 2 ripe bananas. To that, add the milk, eggs, canola oil, and vanilla and whisk until the mixture is pretty smooth.
  3. Add the wet ingredients to the dry ingredients and stir until the batter is well combined and smooth. Then fold in the chopped pecans.
  4. Turn on your waffle maker and cook the waffles according to your waffle iron's instructions. You should get about 5 waffles in a Belgium waffle maker and 6 in a traditional waffle iron.
  5. Finally top with your favorite toppings. I went with sliced bananas, some chopped pecans, and syrup, of course! And enjoy!!
