Cranberry Oatmeal Muffins

Ingredients
  • 2 ripe Bananas, mashed
  • 1 Egg
  • ¼ cup Olive Oil
  • ⅓ cup low fat Milk
  • ⅓ cup Sugar
  • 1 cup Whole Wheat Pastry Flour, or use ¼ cup flaxseed meal and ¾ cup whole wheat flour instead
  • 1¾ cup Old-Fashioned Oats
  • 3 teaspoons Baking Powder
  • Pinch of Cinnamon
  • Pinch of Salt
  • ¼ cup Walnuts, chopped
  • 1- 1½ cup fresh Cranberries
Preparation Instructions
  1. Begin by preheating your oven to 350 degrees.
  2. In a large bowl, mash 2 ripe bananas. Then add in the egg, olive oil, milk and sugar. Whisk until it's well combined.
  3. Add the dry ingredients next including the flour (or flour/ground flaxseed mixture), old-fashioned oats, baking powder, cinnamon, and salt. Whisk well to combine all of the flour.
  4. Carefully fold in the cranberries and chopped walnuts so they are throughout the batter.
  5. Grease 12 muffin tins really well with cooking spray. Then use an ice cream scoop to divide the batter throughout the tins. You'll want them to be about ¾ full.
  6. Bake for 25-30 minutes. Test the doneness by making sure a toothpick is inserted and comes out of the muffin clean. When the muffins are done, remove them from the tins and let them cool on a wire rack and enjoy!
